From the hills of Bensa, in Ethiopia's Sidama region — some of the highest, most careful growing there is. Picked ripe by the Daye Bensa growers and the smallholders around them, washed clean, and dried slow on raised beds. It comes in tight and quiet, then blooms over a few days: candied apricot and blueberry over dark chocolate, bright but never sharp. Pull it as espresso and it turns, and the citrus steps forward.
Every coffee we roast takes the name of a milkweed butterfly. The Blue Tiger drifts through the same East African highlands as this coffee — a cousin to our Kenyan Plain Tiger, deeper and cooler in colour. Two tigers, two washed origins, side by side.
