The cherries are dried whole with the fruit still on the bean, letting the sugars in the fruit carry into the seed — building sweetness and weight rather than acidity. We take this one further in the roast than the rest of our range, a true medium, which brings the cocoa and toasted nut forward and lets the sweetness sit underneath. The Olena (\u003cem\u003eAeria olena\u003c\/em\u003e) is the quiet exception among the clearwings: while its relatives moved onto nightshades, olena stayed with the milkweed family, its caterpillars feeding on a latex-bearing vine in the semi-deciduous forests of Brazil's interior.
